Strawberry is the most popular berry. Strawberry season varies from country to country: in Greece, the peak season is from May to June, in Estonia and Poland, the peak season is June to August. Strawberries differ in taste and properties. For example, ‘Polka’ is one of the varieties that is especially suitable for making jams and for immediate consumption. The delicate structure of the strawberry limits the transport and preservation of the berry. Polish strawberries and Greek strawberries are harvested at very early maturity. Pre-harvested berries are more resistant to transport. The ripening of the semi-raw berry continues during transportation and the berry is ripe when reaching the destination.
